The roastery

A twelve kilo roaster behind the espresso machine

Ilya opened North Bell in 2019 after eight years behind other people's bars, with the specific goal of not selling stale coffee. We roast twice a week on a small drum machine you can watch from the counter and buy green coffee through importers who publish what farmers were paid. Espresso dial-ins are posted daily on the chalkboard, including the recipe.

Coffee questions

How fresh is the coffee you sell?

Every bag has a roast date on it and nothing goes on the shelf older than four days. Coffee is generally at its best from three to twenty-one days off roast, so buying it fresh actually matters.

Will you grind beans for me?

Yes, free, and we will ask what brewer you use so the grind is right. Whole bean keeps far better though, so if you have a grinder at home we will steer you that way.

Do you have decaf and non-dairy milk?

We keep a rotating decaf that we roast ourselves, and oat, almond and soy milk at no upcharge. The decaf is water process, not solvent.

Can you supply my cafe or office?

We serve eleven wholesale accounts around Madison with weekly delivery. That includes help choosing and dialing in equipment and free barista training for your staff.
