About the shop
Two friends, one very stubborn recipe
Marisol Guerra and Trey Bidwell opened Thicket in 2019 after roughly two hundred test batches trying to get a thick cookie with a soft center that did not go raw underneath. Every cookie is scooped and baked here, in batches through the day rather than all at once in the morning. It is a small shop and one of the two of them is usually behind the counter.

Ordering cookies
How much notice do you need for a big order?
Forty eight hours for anything over fifty cookies, and a week for orders above three hundred. We bake large orders alongside the regular rotation, so short notice means either your order or the walk in case suffers, and we would rather not do that to either of you.
How long do the cookies stay good?
They are best the day they are baked and hold well for three days in a sealed container at room temperature. Twenty seconds in a microwave brings a day old cookie most of the way back. They also freeze well for up to two months if you wrap them individually.
Do you have gluten free or allergy options?
There is a gluten free flavor every day, baked on separate sheets with separate scoops. Our kitchen does handle wheat, dairy, eggs, and tree nuts, so we cannot call anything allergen free. We list every ingredient on the board and will always answer honestly if you ask.
How does shipping work?
Boxes go out Monday through Wednesday in insulated packaging with two day shipping, so they arrive Tuesday through Friday and never sit in a warehouse over a weekend. A shipped dozen is $62 including shipping anywhere in the lower 48.
