Imogen Vance trained in pastry in Chicago and moved to Denver in 2017, where she immediately had to relearn every recipe for altitude. The studio caps output at twelve cakes a week so each one gets designed rather than assembled. Everything is baked in house, and the structures inside sculpted cakes are engineered, not hoped for.

Four to six weeks for a celebration cake and three to six months for a wedding, since we only take twelve cakes a week. Saturdays from May through September fill first. We do keep two short notice slots most weeks for simpler designs.
Celebration cakes start at $145 and most land between $200 and $450 depending on decor. Weddings start at $11 per serving, so a hundred guest cake typically runs $1,100 to $1,800. Sculpting, hand painting, and sugar flowers are the three things that move the number most.
At 5,280 feet, lower air pressure makes cakes rise faster and collapse, and liquid evaporates quicker so they dry out. Every recipe here has adjusted leavening, extra liquid, and a different oven temperature. A recipe developed at sea level will fail in Denver, which is why we do not use them.
We can work from a photo as inspiration and will tell you honestly what will and will not translate, especially anything that relies on refrigeration or a short display window. We do not copy another baker's signature design outright, but we will build you something in that spirit that fits your flavors and venue.
