About the truck

One offset smoker, one family, ten years

Dre Willoughby built the first Smokestack truck around a 500 gallon offset smoker in 2015 and still cooks most events himself. We do not hold meat overnight and we do not reheat, which is why we cap the calendar at two events a day and turn work down.

Catering questions we get

How much space does the truck need?

About twenty five feet by twelve on a reasonably flat surface, with room for guests to line up alongside. We generate our own power and carry our own water, so no hookups are required. If parking is tight, send us a photo and we will tell you honestly whether it works.

How long does it take to serve my guests?

We plate roughly 120 guests per hour from one window and add a second server past 150 guests to keep it moving. For a wedding we usually start service right after photos and are done in under an hour.

What about vegetarians and food allergies?

Order vegetarian plates by exact count when you confirm the headcount and we prepare them on separate surfaces. Most of our meats and sides are naturally gluten free, and we will mark the ones that are not on the menu card at the window.

What deposit do you take and when is the balance due?

Five hundred dollars holds your date and comes off the final bill. The final headcount is due ten days out, and the balance is due the day before the event. Cancel more than thirty days out and the deposit transfers to any future date within a year.
