Post oak, salt and pepper, twelve to fourteen hours in an offset smoker. We post the day's location every morning and we close when the meat runs out, which is usually early.
Meat is sold by weight, sides are made fresh each morning, and when it is gone it is gone.

Marcus Ortega cooked the line at two Austin restaurants before buying a used offset trailer in 2019 and pulling it behind a truck to a brewery lot on Cesar Chavez. Everything still comes off that one smoker, which is why we sell out. We do not hold meat overnight and we do not finish brisket in an oven.

We post the day's stop on Instagram and on this site by 9am. Wednesdays and Thursdays we are usually at the brewery on Cesar Chavez, Fridays and Saturdays we rotate between Mueller and South Congress.
Most Saturdays the brisket is gone between 1 and 2pm, and ribs go earlier. If you want a specific cut, come before noon or call ahead and we will hold it for 30 minutes.
Yes. We bring the truck on site for 40 guests or more within 30 miles of Austin, and we do drop off trays for smaller groups. Book at least three weeks out for weekends in spring and fall, those fill first.
The sides carry it, smoked pinto beans made without pork, potato salad, cucumber salad and cornbread. We are honest with people that this is a barbecue truck and the sides are the whole vegetarian menu.
Text or call for same week catering, or send an event date and headcount and we will send a quote within a day. Truck bookings need a 30 percent deposit to hold the date.
