The fish decides the menu, not the printer

Chef Yuji Nakamura trained in Osaka and spent nine years in Vancouver before opening Kaisen. There is no fixed menu because the delivery decides it. Rice is seasoned in small batches through service so it never sits, and most nigiri is handed to you directly across the counter rather than plated.

Reservations and dining

How do I get a reservation?

Reservations for the following month open on the first of each month at 10am online. The 5:30pm seating usually books within an hour and 8pm goes slightly slower. We release cancellations the same day, so checking that morning is worth it.

How long does omakase take?

About 100 minutes for the 17 courses. Please arrive on time, because we start all guests together and a late arrival means catching up on courses that have already been served.

Can you handle dietary restrictions?

Tell us at booking and we will work around most allergies and preferences, including no raw items. We cannot serve a fully shellfish free omakase because shellfish appears throughout the progression, though a la carte works well in that case.

Is there a dress code or a cancellation policy?

No dress code, come as you like. We hold a card at booking and charge the full omakase price for cancellations inside 48 hours, since a seat at a ten seat counter cannot be refilled that late.
