Charred cabbage, hazelnut, dill
Wedged, hearth roasted, dressed in a cultured cashew cream.
Everything on the menu is fully plant based and most of it touches the hearth. We source from four farms within an hour of the restaurant and the menu changes with what they pull.
The kitchen can adapt most dishes for gluten, soy and nut allergies with notice.

Slow smoked over oak, served with charred lemon and herbs.
Local oyster mushrooms over stone ground grits with pickled ramp.
Cooked in the coals, split, and topped with black garlic and pepitas.
Five courses of whatever came in best that week, wine pairing add on.
Chickpea scramble, sourdough hotcakes and a hearth roasted hash.
Root and Ember opened in 2019 in a former auto shop with a hearth built into the back wall. We do not cook fake meat and we do not apologize for a menu made of vegetables, because live fire does things to a cabbage that most people have never tasted. The board changes weekly based on what our growers bring us on Tuesday.
“I brought my very skeptical father in law. He ordered the cabbage twice.”
Nina S., Dinner for four
“The set menu is the best value in Asheville and it is not close.”
Grant W., Local regular
“They handled my gluten allergy without making it weird or boring.”
Camille O., Weekend brunch
Yes, the entire kitchen and bar are plant based, including the wine list and the desserts. There is no dairy or egg anywhere in the building, so cross contact is not a concern for those ingredients.
We hold about two thirds of the room for reservations and keep the bar and patio for walk ins. Friday and Saturday usually book out a week ahead, especially in October.
Most dishes can be adapted with notice, and the menu marks what contains gluten, soy or tree nuts. Tell us when you book so the kitchen can plan rather than improvise on a busy service.
There is a small lot behind the building with about a dozen spaces plus free street parking on Haywood after 6pm. Weekend nights fill fast, so the side streets are usually the faster bet.
Reservations open two weeks out. Large parties of seven or more should call so we can set the back table.
